Beetroot Stir Fry

Beetroot Stir Fry or Beetroot thoran is an authentic kerala side dish recipe made with beetroots and is served with rice along with a curry.

This recipe is so easy to make that it hardly takes 15 minutes to make it if all the ingredients are ready.

Here, chopped beetroots are stir fried and when done coconut along with garlic, shallots and green chillies are crushed and added to give it an extra flavor. Instead chopped beetroots, grated ones can also be used.

Usually fresh grated coconut is used in this recipe but if unavailable you can also use the dry coconut shreds. It doesn’t make much difference. One such product I use when I don’t get fresh ones is ELDORADO’s Riven Kokos(Grated Coconut). They are a great substitute where you need to roast and grind coconut or in cases like these where shallots and garlic is crushed along with it.

This recipe yields 2 servings.

Ingredients

  • Beetroots- 3 medium sized or 2 cups finely chopped
  • Grated coconut- ¼ cup
  • Garlic- 4 small ones
  • Shallots- 4 small ones
  • Green chilli- 2 no.s( or according to spice level)
  • Curry leaves- a few
  • Turmeric powder- ¼ tsp
  • Cumin seeds- ½ tsp
  • Mustard seeds- ½ tsp
  • Dried red chilli- 1
  • Salt as per taste
  • Oil- 3 tbsp

Preparation

  • In a jar, add cumin seeds, garlic, green chillies, shallots, curry leaves and grated coconut and slightly crush it. Keep it aside.
  • Take a pan. Add oil. When the oil is hot, add mustard seeds.
  • When the mustard seeds starts crackling, add red chilli cut into half. Give it a stir.
  • Now add the chopped beetroots followed by salt and turmeric powder. Mix everything. Cover and cook on low flame till the beetroots are soft. Occasionally give it a stir or the beetroots may get burned.
  • Once the beetroots are soft, add the crushed mixture. Mix well. Cover and cook for another 2 minutes before removing from stove.
  • Serve hot with rice and your favorite curry and enjoy.
